Allium, in Salisbury, has been recognised as the winner of the ‘restaurant’ award at the Wiltshire Muddy Stiletto Awards 2024.

Run by chef Tim Tonkin, 37, the restaurant first opened in 2019, and specialises in fine dining – “British food with global influences.”

The Journal spoke to Tim about his reaction to winning.

Tim said: “I was really pleased. I thought we had a good chance but we were against others with amazing reputations. It’s really nice to get that recognition.”

He described his food as very unique to Salisbury. The supplies and produce are local as much as possible –  meaning it is food you can’t get elsewhere.

He added: “We talk about raising standards – maybe get a Michelin star. It’s something to aspire towards.”

Menu choices can change as frequently as every one to two weeks, and inspiration is taken from across the globe - Asia, South America, Africa and Europe.

Their most popular dish is the “Chalk Stream Trout Ceviche” served with potato skins, herb mayo and cherry tomato.

Tim added: “The trout is from a river near Romsey – it’s really fresh and comes with accompaniments. It’s really popular.”

The Muddy Stiletto regional awards rely on votes from the public.

Tim said: “Because this one is judged by people who have been here, customers, it is a lot more significant.

“There are people who have been supporting us since we opened which is really nice. It would not have happened without them.

I will try and avoid eating in chains myself because independents need the support – I know what it is like. Treat others as you would like to be treated.”

Of course, every good restaurant has a good team, and while Tim is in charge, he couldn’t do it without his team.

He said: “The overall decision is mine but without the team to deliver, it doesn’t matter. We all play our parts and we all contribute. It’s about the team.”
